Hello, doing the quest with mossy rock (sardelac sanitarium, vassar) I destroyed by mistake my mossy rock. As such I cant accomplish the quest. Where can I find another mossy rock?

You can't find a new mossy rock. The only way to get a new one is by abandonning the quest while in a town and then take it again from Vassar. He will hand you a mossy rock as well.
